Making a Pasta-tively Amazing Spinach Lasagna!

Hello Everyone, welcome or welcome back to my blog! Today I am excited to be back with another food post. So, a couple weeks ago, I decided to try making my first lasagna, I made it with spinach instead of beef, since I wanted it to be vegetarian. I think it came out great, I hope you guys like it too! Let’s get started:

Ingredients:

  • 12 lasagna noodles
  • 3 cups ricotta cheese
  • 1 – 1 1/2 cups mozzarella cheese
  • 2 cups olives
  • 3 cups cooked spinach
  • salt & pepper – optional: some red chili flakes and oregano.
  • 2 cans of tomato paste.
  • 3 cloves of garlic
  • 2 tbsp. butter
  • Basil – optional: bell peppers, onion, cherry tomatoes, parsley.

Equipment:

  • 3 large pots
  • foil to cover top of baking pan
  • 9 X 13 inch bake-safe pan
  • spatula, large spoon(s), knife, plate
  • measuring cups and spoons

Steps:

  1. In the first pot, add some water, oil and salt and bring to a boil. Cook 4 lasagna noodles at a time. Once they are cooked, set them aside in a plate.
  2. In the second pot, start sautéing the spinach and olives. This should take about 5 minutes.
  3. Slice all the vegetables you wish to use. In the third pot, sauté the remaining veggies and garlic (both are optional).
  4. Add the tomato paste and about 4 oz. of water. Mix with a spatula until it reaches a sauce-like consistency.
  5. Add in the basil and season the sauce with salt and pepper. You can also add oregano and red chili flakes.
  6. Now it is time to layer, start with a base layer of sauce. Spread out 3 noodles on top. Spread 1/4 of your ricotta on top. Lastly, add 1/3 of the sautéed spinach and olives.
  7. Repeat step 6 two more times.
  8. On the last layer: start with sauce, then layer 3 more lasagna noodles, and finish up the ricotta. On top of that spread mozzarella cheese.
  9. Cover with foil and bake at 375 degrees F for 30-40 minutes.
  10. Cut into 12 squares and serve with fresh parsley on top (optional). My brother made some Rosemary chicken to go along with this, but shrimp, meatballs, or any other type chicken will work great too! Enjoy!!

    So I would rather…. 1. Give up cupcakes. 2. Hot coffee. 3. Neither… LOL. 4. I would give up candy. 5. I would totally give up popcorn before potato chips!

      I think I would go with donuts and cold coffee, since I love frappuccinos :). For 3, me neither, they are both evil… I love chocolate and potato chips too! 🙂

    I only drink iced coffee now!
    I’d eatbrownies with carrots.

    I’d rather give up candy and chips!

  3. Hi Tanvi! So I love this post too much…. whenever I make lasagne I always make the pasta sheets also from scratch because whenever I bake or cook , I like to keep everything homemade so the outside preservatives can be avoided. Anyway, I really am not sure for the questions because it’s sooooo hard😥😥😥
    But, 1) I would give up donuts( because I have to eat the fluffy buttercream cupcakes😋)
    2) I would I would definitely give up hot coffee because iced stuff is my favv! 3) I think it has to be brownie with carrot because I love both but I just can’t eat broccoli. 4) I would give up candy . 5) definitely give up popcornnn. I can’t miss potato chips in my life… that’s like my breakfast, lunch and dinner everyday😂🤦🏻‍♀️

    1. Thanks Aarushi! 😄 My mom always says that too. I’ve been thinking of starting to make pasta at home. How do you make lasagna noodles? 😁

      I know right! As I was writing them, I knew it would be a tough call for some.

      I agree, I can’t do without fluffy frosting! I don’t really drink coffee often since I don’t want to get addicted to caffeine, but I’ll definitely pick fraps for a cold treat! 🙂 I honestly don’t know about vegetables in desserts 😂.
      For 4 and 5, same, nothing beats good old chocolate and potato chips! 😄✨🌟🥳

      1. Totally! For pasta sheets, it is actually very easy to make.here it is:
        First you need to add flour and oil, salt in a bowl. Then add water as required to make a very soft and smooth dough. Make sure you need it for at least 5 to 7 minutes and it springs back when you touch it. Then, you need to rest it for 20 to 30 minutes and then roll out a piece of dough as thin as you can. Until it’s transparent and doesn’t tear. Then, cut it into rectangles as per your required size and air dry them for 30 minutes. Then they would become translucent. And done!!

    Would you rather give up donuts or cupcakes? Donuts (the only donuts I like are Krispy Kreme's original glazed)
    Would you rather live in a world with only hot coffee or only iced coffee? Iced Coffee (It's freezing here but I still try to drink a glass of Iced coffee everyday 😛 )
    Would you rather eat cookies with broccoli chunks or brownies with carrots? Brownies with carrots. Carrots go great with desserts (eg: Gajar ka halwa – the Indian dessert).
    Would you rather give up chocolate or candy? Candy!! I would DIE without chocolate. I'm not even exaggerating.
    Would you rather give up popcorn forever or potato chips forever? Popcorn. I think I'm weird but I just don't like popcorn. I never got why people love popcorn this much. I don't mind cheese popcorn but I'd never choose it, just eat it if someone else got it.
